Sake, also transliterated as saké or saki, is a wine made from rice. It is commonly used in Japanese cooking. Many types of cooking will evaporate the alcohol, leaving a nearly non-alcoholic dish. (See the numerous warnings on the alcoholic drink page.)
Mirin is sweetened sake, commonly used to make teriyaki sauce.
